This recipe has been in our family forever. It can be made in many different variations. Cottage cheese instead of or in addition to cream cheese. Crushed pears or mandarin oranges in place of pineapple. The amount of ingredients seem to not matter much because I often forget how much jello or cream cheese, etc to use but it always tastes great.
Dissolve both boxes of JELLO and unflavored gelatin in hot water in baking dish. Stir in sweetened condensed milk, pineapple, cottage, cheese and mayonnaise until thoroughly combined. Chill until firm, at least 2 hours. Sprinkle on lemon and lime zest if desired.
Drain pineapple, saving juice. Add water if needed to make 1 1/2 cups juice. Put juice in saucepan and boil for 1 minute. Add marshmallows and melt while stirring. Add lime Jello and dissolve completely. Let cool until thickens. Add crushed pineapple, cottage cheese, nuts and whipped cream and stir. Refrigerator 1-2 hours until set.
Combine the dry lime jello, mandarin oranges, and pineapple or fruit cocktail in a bowl. Set the bowl in the refrigerator to set for about 2 hours. Remove the bowl from the fridge and stir in the cottage cheese and Cool Whip, stirring until well blended. Serve immediately, or store in the refrigerator until serving.
Our Creamy Fruited-Lime JELL-O® Salad includes walnuts, pineapples and cherries. 1 can (8 oz.) crushed pineapple in juice, undrained. 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened. Mix cream cheese and cottage cheese in medium bowl until blended. Gently stir in COOL WHIP with whisk.
Sprinkle dry jello out of box over the top and mix. Fold in the cool whip. Mix pineapple and cottage cheese together and chill. (Grammie says that the lime jello or orange pineapple were her favorite)
